orange + insanity | WIAW

Another week, another What I Ate Wednesday recap! Since I had an outstanding meal prepping day on Saturday, my meals for the week are relatively set and ready to eat (with the exception of dinner – which is generally quick, fresh, and what is on hand) – but we’ll see how it goes!

[drinks] 34 oz water bottle (x3), morning coffee, morning Nuun water

[morning workout] 45 minutes – Insanity Plyometric Cardio (Garmin Forerunner logged 2 miles of movement)

I had full intention for making up for Monday’s missed workout by waking up early, getting in the cross training workout and then going for my threshold run…but that didn’t happen. I hit the snooze too many times…and I was only able to get in the cross training session. Oh well…maybe I will be able to get in a run over my lunch!

 [breakfast] coffee (butter + oil) + egg bake

I made some bulletproof coffee after my workout and ate my prepped egg bake for breakfast once I got to work.

[morning snack] egg sandwich + orange

After our morning meeting, I warmed up my egg sandwich (prepped from last weekend) and cut up an orange for a nice morning snack.

[pre-run fuel] banana

I had planned on only eating ½ of the banana before and saving the other ½ until after my run…but between the first ½ banana and the actual run, there was a little more time than I expected. I ended up eating the whole thing before I was able to get out!

[afternoon workout] 4 miles – threshold run

Yay! I was able to make up my workout from yesterday! While it was not true to “threshold” pace, I am glad that I got the distance on my legs!

[lunch] venison meatballs + roasted sweet potato + roasted summer squash

I got back from my lunch run (started a little late) and needed to still eat lunch! Yum!

[afternoon snack] apple

[dinner] baked potato + sour cream + cheese + homemade salsa + fresh vegetables 

The hubs was in change of dinner ideas since he had the day off – loaded baked potatoes were on the menu. I chose the smallest potato and added sour cream, a little cheese, and salsa 🙂 I also ate one of my prepped containers of fresh vegetables…but the little guy eventually hijacked both the vegetables and the ranch dip…but mostly a stick of celery as a spoon and ate all the ranch…

  1. This all looks heavenly. I could go for some of that egg bake! YUMMMMY….
    How long have you been doing bulletproof coffee? Some people use coconut oil , I think, have you tried that?

    Keep killing the fit life, your story is really inspiring. Insanity, is such a good workout! Bravo.

    1. Thanks! I don’t drink the coffee quite everyday…but most days 🙂 I use coconut oil and Kerigold butter for mine, the mini baby bullet is the PERFECT size for blending it! I am not sure that I have seen that much of a difference…but my jeans are just a little looser in the waist 🙂 (could VERY well be the cross training too!) Thanks for stopping by!

  2. Breakfast is my absolutely favorite meal. The carby kind, of course. I could eat it for every meal!

    This may not go over with a kid (although both my husband and I have always liked fish, thank God), but one of my go-to easy meals is seared fish. I use mahi mahi from Trader Joes. Take it out about an hour before and wrap in towels to dry it out. Season lightly.

    Melt about 2 tbsp of butter (this is usually 2 meals for us so it’s only 1/2 tbsp butter per meal) in a cast iron skillet (my preferred kind, but non stick should work too) over very high heat — until it’s smoking! Add fish and cook roughly 1 1/2 minute each side. It should get a lovely brown crust from searing.

    Super easy! It’s what’s for dinner tonight, btw. I put some veggies in the oven to roast before I start in on the fish.

      1. Good point 🙂 I might have known that…but I don’t even look at the fresh fish area at the store. Maybe because we have a freezer full of meat – my brain just doesn’t think about getting more 🙂
