Bountiful Basket + jerky | Meal Prep

I was so excited to get another Bountiful Basket this week! I would have got one last week but (1) I still had quite a bit of produce to eat before it went bad and (2) I had a race that was happening while the pick up times were set. Oh well…Let’s see what this week’s basket brings!


Getting the Bountiful Baskets once every two weeks has worked out well so far – both in pick-up timing and being able to get everything eaten before going bad! This weeks basket was full of great fruits and vegetables!

  • 1 bunch of onions
  • 7 small apples
  • 8 med/lg mandarin oranges
  • 3 avocados
  • 1 bunch of asparagus
  • 1 clam shell of strawberries
  • 2 broccoli florets
  • 4 yellow squash
  • 1 head of romaine lettuce
  • 1 spaghetti squash
  • 1 large beet
  • Brussels sprouts

Based off this weeks basket, I will be preparing :

  • fresh fruit all week
  • a fun, new smoothie with beet and strawberry
  • salads for days
  • a spaghetti squash bake


Meal/Snack Prep 

Spaghetti Squash Bake | spaghetti squash + turkey meatballs + homemade pasta sauce + cheese

Roasted Potatoes | sweet potatoes + EVOO + salt

Salads | romaine + Brussels sprouts + fancy lettuce + green onions

Banana Oatmeal Cookies | banana + oats + chocolate chips 

Venison Jerky | original + brown sugar + honey barbecue + hot

I was able to make several kinds of jerky this time around! While I made more original than I needed to, I am going to have fun making different kinds. I really like the brown sugar one! 

Additional Meal/Snack Prep

Fruit | apples + oranges + bananas + grapefruit

Vegetables | celery + carrots 

Quinoa | cooked and divided

Greek Yogurt | divided

 fresh plate of vegetables + fruit

PB sandwich + vegetables

roasted vegetables

turkey meatballs + roasted potatoes

vegetables + dip

venison jerky

quinoa + yogurt
