I ended up making some pretty decent decisions today! [breakfast] egg bake + 1/2 mango
Egg Bake : 6 servings : Bake @ 350 for 30 minutes
8 egg whites
4 whole eggs
3 orange bell peppers
2 medium zucchini
[morning snack] 1/2 mango
[lunch] Summer Spring Roll w/Crab + 3 egg whites
I love love LOVE the Summer Rolls at Dillon’s…and I cannot help but purchase them when they are ACTUALLY made! I stopped by the store on my way to work for Starbucks…and while I was waiting on my drink, I wandered to the sushi station…and BAM! My hopes and dreams were real! Delish…
[lunch run] 2.2 hot miles
[afternoon snack] frozen blueberries + vanilla Greek yogurt
A nice post-run snack : the frozen blueberries freeze the yogurt and it is now a frozen yogurt treat!
[dinner] leftovers (roll up: tortilla + chicken + sour cream + cheese + guacamole) + hard boiled eggs + guacamole + corn + apricots
Story of my dinners – I just make one plate of goodies and the little man and I share!
