Without weekend prepping, my meal feel like a hustle and struggle in the morning! Easy, healthy microwave meals make lunch easy…but my snacks and other meals are a little more interesting. At least I ran today πŸ˜‚πŸ˜‚

[workout] 12 mile start to the day : )

Today’s run felt awesome – cool temps have felt amazing lately!

[breakfast] coffee + Vital Proteins Collagen Peptides

I start most of my days with a cup of a hot beverage with Vital Proteins blended in. I don’t taste the collagen and my usual coffee gives me a little boost to start the day : )

[morning snack] rolled oats + vanilla yogurt + blueberries + sliced almonds + honey

My go-to breakfast/morning snack this week has been a jar of overnight oats and fruit! Instead of mixing my oats with almond milk (since I forgot to pick some up the other day…and I don’t want to go back to the store yet), I just blend it with the yogurt first, then add the fruit and nuts, and top with a little honey just before eating.

These are super easy to prep, and I had little man helping me measure the ingredients and stirring them up : )

[lunch] Luvo Roasted Cauliflower Mac & Cheese

This is one of my favorite Luvo meals – comfort food with a healthy twist!

[afternoon snack] bring on the snacks…

One of our coworkers’ family makes homemade ice cream and has been selling it around 3 pm each Wednesday this month – yum! I have tried the Vanilla Chocolate Chunk and Choco-Mallow Chunk the past couple weeks. This week, I tried the Double Choco-Mallow Chunk…yuuuummmm! 

Next week, I plan on trying the Strawberry Chocolate Chunk ❀ 

Well, since I usually take one for the team…I only ate a few spoonfuls of this delicious treat. I plan to pass off the rest of the ice cream to little man after dinner – he sure loves his ice cream!

Rather, I supplemented my snack time with an almond butter banana. I bought a new almond butter the other day (yes…I have gone through almost 1/2 the jar already) and while I love that it is “no sugar or salt added”, it is thick and doesn’t spread well. I have been putting a spoonful in my little mason jar, heating it up in the microwave, and then drizzling it over : ) Yum!

I look forward to hitting up Costco while in KC this coming weekend so I can get a jar of almond butter that will last me longer than a week or two!

The hubs made up a ton on chicken on Sunday and I dug into some of it tonight for a quick dinner – fresh tortilla, chicken, cheese, romaine, garden tomatoes – the best!
