After a lot of cooking on Monday, I am just working through some leftovers this week. I am always enjoying fresh foods! Enjoy!

[workout] a cool morning easy run  – love those runrises!

[breakfast] post-run protein drink

I am always looking forward to my post-run smoothie – mostly just protein powder, water, and ice. I have read that standard mouth mason jars are compatible to be used with a standard blender – and my blender is glass, so I thought about trying!

It works!!

Now that I know this, I might start “prepping” smoothies for the week and keep them in the fridge/freezer…

[morning snack] apple + almond butter + grain-free granola

My go-to snack!! I love when I remember to pack our fancy apple cutter in my lunch bag…then my apples are all uniform : ) 

I really love the Almond Butter from Once Again – almonds, just almonds – and it is so good! Also, I way super excited to try the Coconut Cashew granola – and I am going to be sad when it is gone! 

[lunch] romaine + chicken + bacon + avocado + avocado + WASA crackers

Leftovers for lunch! The hubs made some chicken on the grill Monday evening for dinner – also the bacon : ) I am enjoying these leftovers for a couple days this week – and I always enjoy wrapping my protein (burgers, hot dogs, chicken, etc.) in romaine!

While I used the rest of 1/2 my avocado from lunch on a couple WASA crackers – it was only like an hour after lunch…so it was practically with lunch… So good!

[dinner] eggs + banana + flax + toppings (banana nut grain-free granola + PB + hemp hearts)

I have been really enjoying “scrambled banana pancakes” for dinner quite a bit lately! I mix a few egg whites, a whole egg, a smashed banana, 1 tbsp ground flax, and some cinnamon in a pan – which could be a simple pancake batter if you make them this way. I would rather pour ALL the batter in at once and make them like scrambled eggs. 

I don’t always top my “scrambled pancakes” with anything but a little honey – but today was some granola, peanut butter, and hemp hearts! So good!
