Meal Prep

So, since I was not able to meal prep this weekend, I am now thinking about what the meals for this week are going to look like… I am linking up with Laura@mommyrunfast for a little Meal Prep Monday ๐Ÿ™‚

Last Weeks Recap

Last weekend, I was able to prep breakfasts and lunches for the week, but dinner was generally “whatever the little guy will eat” sort of situation. He is getting more picky about his eating and that makes for a tough dinner situation.

Meals This Week

Due to being out of town this past weekend, I didn’t get to prep for the week. Also, since this is a “shorter” week, of sorts, there is not as many days that I really need to think about either.

overnight oats (made Monday night for the rest of the week – just add milk the night before!)

Christmas Breakfast

venison and onion bake – like a “hamburger pie” but with ground venison instead! (since the hub got a deer a couple weeks ago, I need to eat up some of last years deer to make room for this years deer!)

spaghetti squash with meat sauce

Christmas Dinner

[snacks]

apple and/or celery with peanut butter

apple with yogurt and granola

hard boiled eggs with veggies

carrots and broccoli with ranch dip

energy bar or energy balls – already made, in the freezer

energy bars are different flavor variations of 1/2 cup PB, 1/2 cup honey, 2 cups oats, 1/4 cup hemp hearts + add ins (I used 1/2 cup of mini chocolate ship in the last batch) – raisins, dried cranberries, and other fruit are good options as well!

  1. Venison and onion bake sounds amazing! I did spaghetti squash this weekend, too! With smoked pulled pork, black beans, and salsa!! Great work on the meal prep!
