Meal Prep Monday (or Tuesday)

I was able to think about meals for the week – but I didn’t prep anything last weekend (whomp whomp…). I am linking up with Laura@mommyrunfast for a little Meal Prep Monday 🙂

Last Weeks Recap

Last week turned out well – I prepped quite a bit, but a lot of it ran our on Friday – good timing!

Meals This Week

Due to being out of town this past weekend, I didn’t get to prep for the week. I prepped a little on Friday before leaving town for the weekend and then again Monday.

Friday morning, New Years Day morning, I made a breakfast (a potato, venison/sausage, cheese bake) for the hub and I – how sweet of me!

I brought him breakfast in bed and we vegged out watching Netflix.

A little while later, I remembered that I needed to out the rest of the bake away. I went downstairs, and…while we were enjoying being lazy, the pup decided to help herself to the rest of our breakfast – and what would have been a few meals! Live and learn…and put the leftovers away promptly…

[breakfasts]

chia pudding + oatmeal (prepped Sunday night)

protein smoothie or drink

[lunches]

sandwich (PBJ or meat/cheese) + fruit/vegetable

hard boiled eggs + vegetables + fruit

[dinners]

turkey meatballs + vegetables

quick, easy leftovers or snacks

[snacks]

apple and/or celery with peanut butter

apple with yogurt and granola

-morningsnack

hard boiled eggs with veggies

carrots and broccoli with ranch dip

random sugar rush vending machine items (should be replaced with item below!) – it happens

energy bar or energy balls – already made, in the freezer

energy bars are different flavor variations of 1/2 cup PB, 1/2 cup honey, 2 cups oats, 1/4 cup hemp hearts + add ins (I used 1/2 cup of mini chocolate ship in the last batch) – raisins, dried cranberries, and other fruit are good options as well!
