brownies + eggs | Meal Prep

This weekend, the little man and I went out of town. We were able to stock up on a couple pantry necessities and make some breakfast and snack items while in KC with the grandparents.

Costco = Awesome!

Upon our return home, I was able to prep some meals for the week!

Meal/Snack Prep

Breakfast Brownies | bananas + chocolate +peanut butter

3 old ripe bananas
1/2 cup peanut butter (or the like)
1/4 cup cocoa powder
2 scoops of chocolate protein powder
**optional topping- dark chocolate chips

Mashed the banana and mix with the cocoa, protein, and nut butter until smooth. Pour the mixture in a greased 8×8 pan and bake at 350 degrees for 20-25 minutes, or until set. Allow to cool before slicing and storing.

Quinoa | milk + quinoa

¾ cup milk
¼ cup quinoa

Mix ingredients and cook in microwave at 60% power for 5 minutes, stir and cook again at 60% power for 4 more minutes. Let sit for 2 minutes – then fluff. Add any spices or sugars to make it your own and enjoy!

Fresh Fruit | apples + oranges.

Greek Yogurt | divided into single portions

Hard Boiled Eggs |  prepped 18 eggs!
