This weekend was relatively relaxing…minus the little man not wanting to take a nap. Overall a great meal prep weekend!

Meal Prep
Venison Meatballs | venison + eggs + bread crumbs + onion + spices
Makes a double batch = 48 decent sized meatballs (will make smaller next time!)
2 lbs ground venison
4 large eggs
1 cup milk
1 cup Parmesan cheese
1 cup panko breadcrumbs
1 large onion
2 garlic cloves
0.5 tsp oregano
2 tsp salt
1 tsp pepper
1/2 cup parsley
1 cup potato flakes
Preheat to 350 + Mix all ingredients by hands + bake for 30 minutes
Creamy Chicken Wild Rice Soup | chicken + vegetables + broth + bechemel
Serves 8-10 (easily) – made for dinner Saturday night, but there are plenty of leftovers for meals this week!
1 cup wild rice
1.5 lbs chicken breast
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery, chopped
5 garlic cloves
2 bay leaves
6 chicken Bouillon cubes + 6 cups boiling water
2 cups water
1 tbsp basil
1 tsp pepper
2 tsp salt
Bechemel = 5 tbsp butter, 1/2 cup flour, 2 cups milk
All all ingredients to crock pot for 4hours on HIGH + with 30 minutes to go – shred chicken and return to pot, start bechemel (melt butter, stir in flour for a minute, add milk and wisk until creamy) + add bechemel to crock pot and blend together + ENJOY!

Serves 12 – This is a recipe from Amanda, slightly modified due to no baking soda in my house 🙂
