[morning drink] bullet proof coffee (Kerigold unsalted butter + coconut oil + coffee)
[drinks] 32 oz water x3 (at work) + 32 oz water (at home)
[breakfast] banana chocolate protein brownie
I made these protein brownies last week and put them in the freezer…yum! A nice cold brownie for breakfast – yes, please!
[morning snack] quinoa + Greek yogurt
I saw some interesting Greek yogurt on sale at the store the other day, so I picked up a few. While I am usually eating plain or vanilla Greek yogurt, the blueberry was a little twist on the norm – and the “crunch” was good too!
[lunch] potato leek soup + mixed salad
[afternoon snack] orange + Hemp Heart Bar
[dinner] enchiladas + jimica fries (oven roasted)
Leftover enchiladas for dinner = yum! I decided to chop up one of the jimica that I got from my Bountiful Basket last weekend (you can read about the contents here). While I was chopping, the little man wanted to eat some…so I gave him a stick or two as he asked… The last time I ate jimica it was raw…he seemed to like it just fine!

OK – that coffee… what is that about? I keep hearing about butter & oil in it. Does it bother your stomach?

Not for me…I only use 1/2tbsp of butter and oil. When I read about others, they are using 1tbsp of both…I think a full tbsp would bother me a little, but mostly I don’t care to drink 200 cal of coffee 🙂

I’ve been craving oranges lately! This week I prepped an adrenal tea Lindsay Cotter had on her blog a while ago – it’s tulsi and fresh oranges with some other stuff. Really good!

Which hemp heart bars have you tried? My favorite was the apple cinnamon. And those protein brownies look good. THanks for sharing the recipe! Hope you have a blessed day!

They were interesting baked! They were a little flimsy…so maybe I would cut them a little thicker next time or cube it.

I think I made the same protein brownies! At least very similar. Except I ate it all warm & gooey (and not for breakfast).
Some day maybe I’ll do a WIAW, but I also love Deb’s Wednesday word!

I liked the brownies, but I would rather make the Banana Oatmeal cookies…I have been playing with different add-ins. Sounds like you might have double blog day 😉

Someday, maybe, probably not any time in the near future. Even one a day, even not working, can be a lot!
I prefer cookies for breakfast, too, but that brownie sure hit the spot after a run!
