Happy Wednesday! We have halfway through the week…and my “meal prep” over the weekend is going strong! I know I will need to make up for a few items that are not going to last through Friday, but I am okay with that. Today’s eats are relatively representative of my meals for the week. Since I was out of town last weekend, I didn’t have a lot of time to prep – so the little time I spent prepping Sunday night and Monday morning was simple meals/snacks that could be combined with other items to make a full meal! [morning drink] bullet proof coffee (Kerigold unsalted butter + coconut oil + coffee)
After I spent 6+ months making my little man’s purees, the Baby Bullet went virtually unused (and REALLY, the size of this processor was too small for most of the batches I made). NOW, this it is the PERFECT size for my bullet proof coffee (using the middle size setting on the Keurig)!
[drinks] 32 oz water x3 (at work) + 32 oz water (at home)
[breakfast] water + spinach + blueberries + vanilla protein powder
I made some smoothie packs a week or so ago and most of them are still in the freezer! I don’t use them as often as I would like because I get nervous that the Ninja is going to wake up the little guy upstairs…no bueno! I used both the Baby Bullet (bullet proof coffee – perfect size!) and the Ninja (smoothie) this morning without the little guy waking up 🙂
[morning snack] apple + Greek yogurt + quinoa
I like playing with the extra ingredients that I eat with my yogurt and fruit – sometimes I add granola, chia, hemp hearts – and today, the add was quinoa! I made a small batch this past weekend and it goes great with my morning snack!
[lunch] pork chop + roasted sweet potatoes + green beans
This is my go-to lunch for most of this week! The hubs made pork chops on Sunday and I still had some potatoes left over – BAM, leftover lunch = the best lunch if you ask me!
[workout] 4 mile run – easy, recovery run

Today is an easy, recovery run. I decided to use my lunch break for today’s workout – since it is an “easy” paced run. That, and I just dilly-dallied around this morning – cleaning dishes, moving laundry around…the usual.
[afternoon snack] mixed salad + cranberries/pumpkin seeds/dressing + hard boiled egg whites
While I usually crave sweets in the afternoon, I thought that a “sweet” salad would be a good, healthy compromise. I also have a bunch of eggs that I hard boiled on Sunday that I would like to eat!
[dinner] brautworst + mixed salad + dressing

Salad is made up of kale, Brussels sprouts, romaine, and the sweet is the cranberries, pumpkin seeds, and dressing 🙂

Hello! I am so glad I stumbled upon your blog today through the WIAW crew! When I used to have roommates, I always worried about waking them up using the blender. Sometimes I even made my smoothies in the bathroom!

Yep! I have thought about freezing yogurt in mini cupcake cups and adding them to the bags too 🙂

Great eats! I have been really trying to get into the meal prep routine…For my husband’s lunches at least! He’s horrible at eating packing his own 😉

Mine doesn’t pack one at all…I wish he would just eat what I make, but he says he isn’t a rabbit 🙂

That’s great! I need to find a way to at least prep sandwich meat/cheese/toppings separate from bread – he will eat sandwiches but complains about the bread getting “soggy” by lunchtime.

That’s interesting…does he have sandwiches without condiments? I’ve seen roll-ups (without bread) that I should do for my husband’s lunch (he wants to be Paleo).

I generally put mustard and mayo on his sandwiches…that doesn’t help with h the delayed sogginess…
