Most of the meal prep this week happened in Saturday…since my little man decided to take a nice, long nap, I was able to get a lot accomplished! We were traveling Saturday night, out of town Sunday, and came back at the butt-crack of dawn Monday morning…so meal prep was key for my Monday meals and snacks! Grab & Go!

Meal Prep
Smoothie Packs | spinach + blueberries
1 cup spinach (per pack)
1/4 cup blueberries (per pack)
Add to blender with 1 cup water, blend until smooth, add extra ingredients and ice, blend to desired consistency. This recipe makes 1 smoothie pack – I made 8 of these at the same time for quick morning smoothies!
Egg Muffin Sandwich | egg + spinach + cheese + English muffins
1 cup spinach, chopped
6 eggs
6 egg whites
6 slices of cheese
6 English muffins
Blend 1 cup spinach (fresh bag frozen, then crushed into small pieces) with 6 whole eggs and 6 egg whites, pour mixture into greased large muffin pan, bake at 350 until set (15-30 minutes). Fold inside the four corners of the cheese, place 1 egg/spinach “puck” on bottom of English muffin, top with cheese and top muffin, wrap and freeze! Wrap in paper towel and place in microwave on high 45-60 seconds, flip over and repeat time (or until heated throughout).
Roasted Sweet Potatoes | sweet potatoes + oil + salt
sweet potato – chopped
extra virgin olive oil
salt (sea salt preferred, but any salt will do)
Chop up the sweet potato into 1″ cubes; drizzle oil on the pan or aluminum foil, lay out potatoes in a single layer, drizzle with oil and sprinkle with salt – place in preheated 350 degree oven for 20 minutes, turn the potatoes and place back in the oven for another 20 minutes. Bake until the edges are brown – or desired consistency. You can sprinkle with salt again after taken out of the oven…Yum!
I started with chopping only 1 of the HUGE sweet potatoes from the Farmers Market – but the resulting roasted potatoes were so good that I decided to chop up the second, even BIGGER potato as well! I ended up making 3 pans of roasted potatoes 🙂
Roasted Summer Squash | summer squash + oil + red pepper flakes

extra virgin olive oil
red pepper flakes
Chop up the summer squash into 1″ cubes (or so); drizzle oil on the pan or aluminum foil, lay out squash in a single layer, drizzle with oil and sprinkle with red pepper flakes – place in preheated 350 degree oven for 20-25 minutes, turn the squash and place back in the oven for another 20-25 minutes. Bake until the edges are brown – or desired consistency. *careful when opening the oven, the red pepper will blast you in the face*
Egg Bake | egg + kale + mushrooms + onion
6 eggs
6 egg whites
4 cups chopped kale
2 cups mushrooms, chopped
1 onion, chopped
Put kale in food processor, blend – add eggs and blend well; add mushrooms and onions to greased 8×8 baking pan, add kale/egg mixture to vegetables and stir to combine. Place pan in oven preheated to 350 for 30-40 minutes, or until set.
Additional Meal/Snack Prep
Fresh Fruit | apples + oranges + mango (below the bowl) + bananas (next to the bowl)
Cut/Prep Vegetables | carrots + celery + cucumber
Plain Greek Yogurt | divide into 1/2 cup servings (easy grab & go)

I love the idea of meal prep for the whole week. This is great. This is just for you – I assume and not for your whole family. Do you get bored eating the same thing all week? I am curious to know more.

Yes, most of the prep shown is just for me. The hubs is a little more picky about his meals…although I do prep baggies of snacks for him to grab and go in the morning. Personally, I don’t get bored with the food I prep – there is generally enough variety that I can change up the veggies or add something different to keep it fresh. I know the hubs would rather not have anything close to the same meal twice…while I could probably have it a couple times a day 🙂 The little man isn’t too picky yet, but he enjoys the variety like I do.
