Start of a new week! I hope this week is finding you well with your meal prepping efforts! Our fridge is full of containers of spiralized zucchini and sweet potatoes, cabbage “stir fry”, roasted vegetables, freshly cut vegetables, and so much more 🙂 My meal prepping efforts happened on Sunday and I hope that they last at least 1/2 the week!
[drinks] water +water + Nuun w/La Croix + water
[breakfast] egg whites + spiralized zucchini + tomato + cottage cheese + pepper
[morning snack] plain Greek yogurt + roasted broccoli & cauliflower + cubed sweet potato
[lunch] cabbage “stir fry” + cottage cheese + 2 Mandarin oranges
[dinner] avocado + oranges + roasted broccoli & cauliflower + sweet potato + leftover bratwurst
One big plate of food for dinner is the new routine for little man and I…less hassle, more food choices, less to clean up… win, win, win!
[evening snack #1] apple
[evening snack #2] plain Greek yogurt + sliced strawberries + frozen blueberries
[late-evening run] 2.05 mile “easy” shake out run + the pup
P.S.– no run with a 3 year old, 65+ pound lab is an “easy run”…she would have been happiest if I were sprinting! Oh well, at least I was able to get the cobwebs out after not running yesterday…
