Well, I missed posting about my Meal Prep post for last week..because I didn’t meal prep! Being out of town all weekend doesn’t help or encourage meal prepping… I mostly flew by the seat of my pants last week. This week will be a little different and back to the norm of prepping for the week!
This Weekend’s Bountiful Basket
- 7 large oranges
- mushrooms
- 3 orange peppers
- 5 small apples
- 2 heads of romaine lettuce
- 7 roma tomatoes
- 5 LARGE carrots
- 1 pineapple
- 2 cucumbers
- 1 fennel – not sure what to do with this…Pinterest will tell me!
- 2 summer squash
- 5 yellow onions
I also contributed to 8lbs of mangos and a bag of Tropical Granola! The granola is SO good and the mangoes were too great to pass up!
Meals to prep with this week’s basket
- fresh fruit for snacks
- fresh vegetables for meals and snacks
- salads for meals (since I still have the head of butter lettuce from last week as well)
- roasted fennel and carrots
- spiralized vegetables (squash, carrots, etc)
Meal Prep
Spiralized Zucchini | zucchini + EVOO + pepper
Roasted Sweet Potato | sweet potato + EVOO +salt n’spice
Roasted Vegetables | broccoli + onion + fennel + carrots + EVOO + salt n’spice
Cauliflower Fried Rice | cauliflower + EVOO + eggs + mixed frozen vegetables

Yes! I am a mess in the morning, especially if I get in a morning workout. The prep helps A LOT!

Great Post! Everyone is genetically built a little different. I have found eating for my body type has really improved my macronutrient caloric intake. Also, I have found by using the handful method and by using pre-measured meal prep container like http://macrostacks.com versus measuring spoons and cups I am more consistent with proper nutrition for my body type.
