Due to being a crazy busy person, mostly just a needy little boy in the evenings wearing me out, I have not been good at my WIAW posts the past couple weeks! I don’t like that I have missed them, so I am going to try a little harder! Not sure what day this is from, but it works!! Enjoy!! While I am not the advocate for missing breakfast, this morning was a busy one and I just didn’t get enough time to eat something filling. Don’t worry, my “morning snack” was an early one…

[morning snack] 1/2 large cucumber + cottage cheese + nectarine
A simple, filling snack to start the day! The cucumber and nectarine came from my Bountiful Basket from last weekend!
[run-ch] Due to needing to get my car and just barely making it to the gym, I was able to get in at least my mile for the day!
[lunch] sandwich bread skinny + eggs (1 whole egg, 2 egg whites) + 1/2 avocado + 1/2 large cucumber
While this picture is a little older than the picture I missed taking today, this has been a staple lunch or snack most days the past couple weeks. It is so easy to microwave the eggs (put in a bowl, mix up, set microwave to 2 minutes and stir every 30 seconds), toast the bread (keep the halves together in 1 side of the toaster for a perfect toast without becoming cracker like), and carve out an avocado…fresh and simple!!
[afternoon snack] La Croix Lime + Nuun Cherry Limeade (my favorite combo!!)
[dinner] bratworst + lettuce + bun + broccoli
The hubs response to what I was eating… “What is THAT?” Well, I am adding some veggies to my meal…get over it 🙂 If the lettuce wasn’t already roughly chopped, I probably would have forego the bun all together… I could use the carbs anyways!
[evening snack] banana “nice-cream”
Remember all of those bananas I had after my race a few weeks ago? I made a couple loaves of bread (sent one loaf to KC with the hubs parents) and cut up the rest, froze them, and then made nice-cream! So good!

Yum! If you add some almond milk to the bananas when you blend them, you get a creamier consistency 🙂

Yeah! I was running low on my unsweetened almond milk…I used almost the whole carton 😆 Lots of nice cream treats!
