A long weekend ahead! An easy Friday, a “lazy” Saturday due to rain most of the day, driving back to KC Saturday evening, a busy Sunday, and an easy Monday! Happy 4th of July!

Little man and I had no plans and decided to chill out at home – and out of the heat!

Saturday

While my alarms went off, I did not… The lightening in the window told me that I wasn’t going to be able to run this morning. Bummer… I guess a day off isn’t too bad…but I WILL get my long run either Sunday or Monday! Rather than sleeping my morning away, I was awake for a couple hours…then I went back to bed and relaxed until little man wanted to start his day.

Once little man was up, bathrooms, changed, and awake, we got the road to JC to pick up our Bountiful Basket. We got there early enough to volunteer and little man hung out on the sidelines. I’m glad I brought snacks because little man wouldn’t have stayed out of trouble otherwise. Once we were done, we headed home.

Like on the way to JC, I attempted to stop at Starbucks…on the way out, there was a line of cars around the building and a lot of cars in the lot…so I didn’t stop so we would be at the volunteer time. On the way home, it was WORSE! So, I decided to just make some coffee at home 🙂

Little man and I enjoyed a little lunch and then it was off to a nap for him! I should have indulged in a little shut-eye, but I just kept busy around the house. First thing, checking out my Bountiful Basket loot and my new Cherry Pecan Granola : )

  • 2 clamshells of blackberries
  • kale
  • 3 cucumbers
  • 3 onions
  • 3 broccoli
  • 1 honeydew
  • 4 oranges
  • 3 acorn squash
  • 10 plums
  • bag of red grapes
  • 9 limes

With the little man down for a nap, I can work on using up some of my vegetables in the kitchen. I know I want to make cauliflower rice (since I have one that NEEDS to be used), a dish with broccoli (since they are taking over my fridge drawers), dividing fresh vegetables and hummus into servings, dividing fruit into portions, etc.

Cauliflower Rice – 2 servings

1 head of cauliflower
1 onion, diced
1 tsp grated garlic
1 bag frozen vegetables
2 tbsp EVOO
2-4 tbsp soy sauce

Grate or food process the cauliflower into “rice” like consistancy. Put cauliflower, onion, garlic, and oil in a hot skillet and cook mixture until onions are tender. Add frozen vegetables and cook until vegetables are cooked through. Add soy sauce, mix, and serve! I kept this at 2 big servings, but can easily be portioned smaller as a side and not as a main meal!


Egg Broccoli Bake – 6 servings

12 eggs
1 large broccoli
3/4 cup of cheese
salt & pepper
1 tbsp milk

Preheat oven to 375 degrees. Cut the broccoli into 1″ florettes and boil until cooked, drain, and allow to cool. Beat the eggs in a large bowl with spices and milk. Put broccoli in large baking pan and top with cheese. Pour egg mixture over broccoli and cheese and mix a little to disperse the mixture throughout. Bake for 25-30 minutes or until the eggs are set. Enjoy!

The rest of the afternoon was spent doing dishes, doing laundry, running a quick errand, and packing our bags to go to KC.

Once the hubs arrived home from work, we were ready to hit the road!

Once we got into town, we were welcomed with LOTS of rain and dinner 🙂 Enchiladas, yes please!

Sunday

I am a good procrastinator…but I wanted to get in my run before meeting up with my parents for lunch.

Nana and little man played ball on the staircase…

IMG_2657Papa made everyone breakfast…

I wasted time enough until I NEEDED to leave for my run.

I planned the route – and I planned on finding ALL of my #RunChatHunt items in this run. Yeah…I planned on finding them over the past month…but it just didn’t happen!

Boy did I work for this hunt! Procrastination (yep…again,…a theme?) at its finest! My favorite picture (…or rather 8 pictures) was the #RunChat at the end 🙂 Yep, my route was the hashtag for my #RunChat image! There were many hashtags that I found along the way, but the purpose of my route was to make one…so that’s what I did!

After the #RunChatHunt fun, I came home, showered up, and went out to see my parents. Little man and I squeezed in with Papa Joe. Little man ordered the mac & fries and I ate the Vegetable Scramble 🙂 Goooood!

Once we got back to the other Nana/Papa’s, I put little man down for a much needed nap. He was exhausted and I made sure that he stayed awake during out drive home!

While he was asleep, we went to Costco. I got a couple necessities and went looking for trouble…

The evening was spent at a good family friend’s house at their big 4th of July party! The hubs and I were really looking forward to seeing some old friends and just having a little fun 🙂 Little man was surrounded by many other little kids, but choose to hang out to himself most of the time – or at least until Nana and Papa showed up!

Monday

This long weekend ended with the 4th of July! The morning started with breakfast with Papa.

Little man and I had a little play date with my BFF and Miss Juli. We hung out on the driveway and played with the wagon, played in the backyard with the dogs, and tossed Beanie Babies around the living room 🙂

After the fun, I needed to get out and get my run in before it got too hot. Yeah, I wanted to get it in before the sun came up,…but sometimes, the best plans just don’t happen!

Before I left, I came downstairs and little man and papa were watching a movie 🙂

Post shower, I enjoyed a little leg up time before we needed to head to the school for the pre-fireworks dinner and fireworks. Looking back, I should have mixed up my workout wardrobe and post-workout wardrobe…all red run and all blue evening 🙂

  1. Ah the beauty.of nap time!!! My 3 yr old is a big napper but the 1 yr old didn’t get the memo… His naps are so short and sporadic! That bountiful basket is beautiful! I love the idea of getting an assortment of fresh produce. I might have to look into it! Happy belated fourth of July!
