A long, busy day of working doesn’t bode well for my eating… I would LOVE to have 3-4+ smaller meals throughout the day, but I have been lucky with 3 lately. It’s alright! Today was also a rest day,…so less calories in means less needed to work off…or something like that! Check out the other WIAW posts with Jenn and her gang of foodies!

[drinks] 16 oz hot Nuun water (the hot water makes it fizz faster!!) + 20 oz water & 20 oz fresh tea to start the workday + 40 oz water midday + 20 oz water after work
[breakfast] English muffin + 1/2 avocado + 1 egg + 3 egg whites + ground red pepper
I feel like I am going to be eating a lot of avocado in the next couple days…I have 3 on the counter – 1 has a few days left and the other 2 are a little softer than I would be comfortable with leaving out much longer… Oh well, I do love some avocado toast!
[lunch] spaghetti squash + cherry tomatoes + ground venison + cottage cheese +red pepper flakes
I am slowly making my way through the large spaghetti squash I received in my Bountiful BAsket a couple weeks ago…slow and steady! Since the hubs cooked up a couple pounds of ground venison with some taco seasoning the other night, I took some to add to my lunch! It is a healthy, deconstructed, spaghetti dish – squash, tomatoes, meat, cheese – all the core elements a typical pasta dish would have : ) So simple. So good!
[dinner] fresh spring rolls
Little man is quite the bird when it come to eating these days…at least for me. We go through several snacks in the evening…the first is generally “dinner”, followed by “What’s to eat?” requests throughout the evening.
I made myself a fresh vegetable and crab spring roll. I am starting to get a little better at making them…but this one was another experiment. Since I have avocados that NEED to be eaten (and I forgot to use one), I made a double wrap! All the vegetables and meat in 1 wrap, then I spread the avocado on a second one and wrapped it around the first…double decker sort of situation. It could have been a lot messier…but it was GOOD!

I’ve been wracking my brain trying to come up with a light summery meal lately – it’s been too hot to want to eat in Tennessee! Those spring/summer rolls you made for the little one look like a perfect meal. Thanks for the inspiration!

They are fantastic! Using the spring roll wrapper is taking some trial and error…more error…but still edible!
