I really enjoy participating in Clean Eating Challenges with friends on Facebook…this week isn’t much different! I prepped like crazy this past weekend and I SHOULD be set for the week… I am human, I do steer from the “straight and narrow”, but I am trying to eat clean to the best of my abilities this week! While this is a snip of a day, this template of eating will hopefully represent most of this week (minus the craziness of dinners…)!
[workout] 4 mile interval run + 3 easy miles
[breakfast] bulletproof coffee (9 oz coffee + 1 tbsp coconut oil)
[lunch] 4 oz chicken (cooked in the Instapot) + 1 cup roasted broccoli + 1 cup roasted sweet potatoes + 1/4 avocado
I was quite surprised how long my morning bulletproof coffee lasted in my tummy today! It is a mixed bag whether my morning joe satiety will last a couple hours or until lunch… Today, it lasted until almost noon! That is a record or something for me! Due not being hungry or bored enough to eat, I didn’t get a morning snack… But it might be made up later in the day!
[afternoon snack] homemade kombucha – While I haven’t been hungry today, I sure have been thirsty! I remembered that I put a bottle of kombucha in my mini-fridge at work and now is as good a time as ever to drink it! Oh so good!
I just brewed my second batch last weekend…I am excited to see if I can get this batch to carbonate! You can check out my Weekend Happenings post to see a couple images from my process…maybe I’ll post about it overall sometime…? Would you be interested?
[dinner] fried eggs (2 whole + 2 whites) + fried onions + roasted sweet potato
While my dinners may change day to day, I have plenty of options at home! Tonight, I really wanted to have eggs…then I added the onion because we have a ton of them…and I really wanted some more sweet potatoes (so I made fries!). Paisley just watched me eat, whining at me the whole time…

I really want to try making Kombucha at home! It can get expensive at the store, depending on the brand and where I buy it from. It looks like you had a pretty good day of eats though 🙂

Yes! I know! A local kombucha brewer let me purchase a SCOOBY so I could start my own…theirs is $10 per 64oz with a used growler – so pretty cheap in the long run compared to the store…but it is still so much cheaper to make at home!

The food for the day looks great! I also love roasted vegetables and kombucha. I have them both with my lunch today! I have never tried to make it at home, I’m not sure if I am not talented 🙂

When I first hear of kombucha my friend told me that it was basically a mushroom drink and I absolutely hate mushrooms, therefore I have been too afraid to try it! Maybe I’ll have to venture out and try a bottle and see for myself!

LOL! No mushrooms…although you might be able to ferment with them, but I am not about to go down that road 🙂 It is just tea!
