I didn’t get a ton of meal prepping done this past weekend…some relaxation time took over. Oh well. My go-to prep – roasted sweet potatoes. I can always make time for that!
[morning joe] a cup of watered down coffee before my run
[morning run] 3 mile interval run + 5 miles easy
[breakfast] Manitoba Hemp Protein Mixed Berry + Nuzest Smooth Vanilla
[morning snack] roasted sweet potatoes + eggs (1 whole, 4 whites) + guacamole
More like a small meal, this warm snack hit the spot! I planned on eating it all on one plate or bowl, but I didn’t have anything big enough at my desk… #goodeats
[lunch] spaghetti squash + kielbasa tomato sauce
[afternoon snack] Lara bar
A busy day meant that is didn’t sit around snacking all day…so before a big meeting, I grabbed a Lara Bar out of my desk. Good snacking on the go!
[dinner] kale + romaine + spicy ranch + roasted sweet potato + crock pot pulled pork (recipe on Saturday’s blog post)
Just another day in the life! Check out the other WIAW posts with Jenn and her gang of foodies – Arman and Laura. I enjoy checking out the other link ups for meal inspiration!
I’d love to hear from you! Leave a comment and start a conversation!

oohhh your lunch looks so good! Also, that’s my faaavvvorite larabar!
I have so many Lara Bars to try in my desk, I really liked it!
Ohh I don’t think I’ve tried that flavor of larabar but I’ve heard it’s good!
I sure liked it! First time trying it 😀
Sweet potatoes are my go to when I really don’t feel like meal prepping. They’re so good paired with almost anything!
Yes! If all else fails, sweet potatoes are always prepped 😆
