sweet potato + homemade eats | WIAW

I didn’t get a ton of meal prepping done this past weekend…some relaxation time took over. Oh well. My go-to prep – roasted sweet potatoes. I can always make time for that!

[morning snack] roasted sweet potatoes + eggs (1 whole, 4 whites) + guacamole

More like a small meal, this warm snack hit the spot! I planned on eating it all on one plate or bowl, but I didn’t have anything big enough at my desk… #goodeats


[lunch] spaghetti squash + kielbasa tomato sauce


[afternoon snack] Lara bar

A busy day meant that is didn’t sit around snacking all day…so before a big meeting, I grabbed a Lara Bar out of my desk. Good snacking on the go!
