[breakfast] CLICK coffee protein drink (hot)

[morning snack] almond butter perfect bar + Nuttzo peanut butter

#itsperfect is right! I took an already perfect snack/meal and added a little more love…Nuttzo love 😀 Awesome!

[morning snack #2] kitkat – sometimes, you just need a little chocolate crunch!

[lunch] cauliflower “rice” and vegetables + turkey kielbasa + roasted sweet potato

My meal prep totally helped today! I grabbed a few containers as I was heading out the door and this lunch was on point! 

[afternoon snack] roasted sweet potato + avocado

While small, this snack totally hit the spot! Hot potatoes, cold avocado – yum!!

[dinner] chicken pot pie + roasted sweet potatoes

Little man and I noshed on this quick meal! I was ready to eat and little man was still playing…but when he decides he wants to eat, there is no time to waste!

    Your cauliflower rice looks amazingly delicious. Will you please share your recipe?


    1. Thanks you! The 50K was tough…but I got through and in a time I knew I was capable of 🙂 My cauliflower rice recipe changes every time, but this one is 1 head cauliflower (through a food processor or grated), 1/3 cabbage sliced thin, green onions, a bag of frozen vegetables 😀 I also have a cabbage stir fry recipe here (just add the grated cauliflower) : https://livinglovingrunner.com/2016/04/03/bountiful-basket-meal-prep-2/
