Bountiful Basket  | Meal Prep

Have you ever heard of Bountiful Baskets?

Bountiful Baskets is a not-for-profit food co-op for fresh produce for less money. I was told about the local Bountiful Baskets by a coworker and thought I would try it! Here’s what I received this week :

– 3 baby bok choy – possibly eat in smoothie (never had it before)
– 4 large oranges
– 5 small apples
– 2 medium jimica – slice and eat raw
– 2 bunches of radishes – I don’t particularly care for raw, try roasting
– 4 bananas
– 3 cucumbers – slice and eat fresh
– 2 zucchini
– 4 heads of artisan lettuce – fresh salads!
– bag of potatoes
– 3 leeks – I have never cooked with leeks before…I will now!

I am not sure that I will participate EVERY week, but for the price and quality of the produce, I will surely think about it! With the delivery on Saturday afternoon, I would still have time to meal plan for the week after seeing what goodies I get week to week (since it changes every week!). I should have waited to go to the grocery store until AFTER getting my Bountiful Basket this week – I have a surplus of apples and oranges that need to be eaten this week!

It looks like I have some prep to do for this week!

– fresh cut vegetables for snacks

– fresh fruit for snacks

Meal/Snack Prep 

Chicken Enchiladas | chicken + sour cream + chilis + onion + tortillas + sauce + cheese

Potato Leek Soup | potatoes + leeks

5 large potatoes (or 10 smaller)
3 leeks
1 onion
4.5 cups water
4 chicken bullion cubes
1/2 cup milk
1 tbsp salt and spice (homemade)
pepper to taste

Additional Meal/Snack Prep

Spaghetti Squash | cooked + cleaned + divided 

Acorn Squash | cut + slow cooker + cleaned + divided

Vegetables | celery + carrots + cucumber

Fruit | apples + oranges + cuties + bananas + grapefruit

Quinoa | cooked and divided

Roasted Radishes | cleaned, cut, roasted with oil, salt, and pepper

Banana Oat Cookies | old ripe bananas + oats + chocolate chips

Meal/Snack Plan for the Week

[breakfast]

protein smoothie + spinach + blueberries

egg + English muffin + cheese

oatmeal + fruit

[lunch]

venison meatballs + salad

spaghetti squash + venison meatballs + chopped tomatoes

turkey/ham/cheese sandwich + vegetables

potato leek soup + mixed salad

leftovers

[dinner]

potato leek soup

quesadilla + sour cream + salsa

spaghetti squash + venison meatballs + chopped tomatoes

[snack]

homemade granola bars

fruit + yogurt + granola

vegetables + dip

quinoa + yogurt
