A busy week forllowed by a slow, yet busy weekend! I’ll take it!

Friday

Not a great start…no run, no gym, no yoga. Oh well…

I worked through the day and was able to get away for a coffee walk (our local Brew Crew is closing 😦 probably because of the Dunkin’ Doughnuts that moved in across the street…) and a quick drive to the bank. I totally would have used my lunch break to run, but the wind and wind chill were not something I wanted to mess with…

After work, little man and I can home and chilled out…well, mostly him 🙂

I new I was getting a Bountiful Basket in the morning and it is almost guaranteed to have apples…and I still have most of the apples from the last basket! Time for some apple chips!!

Before I really got into the apples, I had already slices and chopped some sweet potatoes and had them roasting in the oven 🙂 Yum!! This way, they were cooling while I slices apples and would be ready to be put away once I was finished!

The hubs isn’t feeling well – the doc says he has bronchitis. He headed to bed once he got home from work and I brought him some soup. Little man is t familiar with us just hanging out in bed…so he was up the stairs, into our bed, off the bed, down the stairs, and repeat… Once I was finally ready to settle in for the night, he was the worst wiggle worm!! 

Before long, everyone was in their correct beds for the remainder of the night 🙂

Saturday

Well…today didn’t start ANYTHING like I planned. I planned on running 10 miles…didn’t get up on time. Changed Plans to run 5 miles…didn’t happen (just too cold for my lungs just yet). I planned on Volunteering at the Bountiful Basket pick up…didn’t happen. 

At least my apple chips turned out overnight!

I got out of bed for the 3rd time around 7:30 am… The BB pick-up starts at 8am so I was going to be cutting it REAL close to forfeiting my produce! I got little man around quickly, we quickly celebrated that he stated dry all night (YAYAYAYA!!!), and we were on the road quickly!

We made it on time to the pick-up and we were near the last… Sounds like they didn’t get enough Cutie Mandrain Oranges and we could choose a basket with out without…but once little man heard “cuties” he knew what he wanted 🙂

Once we packed up and left, we headed to Starbucks! I pre-ordered my coffee on the app and let little man pick out whatever drink he wanted when we arrived – always chocolate milk.

We checked into the bathroom (to keep his dryness in check) and hit the road! 

Even though we now have a basket full of produce, I still enjoy going to the Farmer’s Market. Next stop!

Now that the weather is colder, the indoors FM starts!

Little man’s one request for today was “Mac and cheese”…so our last stop is the grocery store! We wandered around for a bit to find a “school bus” to ride in…but none were around. So we walked!

Done! Heading home!

I made up little man his requested Mac when we got home and started Toys 3 for the 6,738 time 🙂 

After a long conversation with my dad (he said he was at the gym but could talk…he was that older gent talking on his cells on the weights machine…THAT guy – ha!!) and a conversation with the MIL, it was time for little man’s nap.

Time to cook!!

I started with juicing come carrots!

I sure hate to throw out the pulp if I don’t have to…so I jumped on Pinterest and found an Italian Meat(less) Balls recipe that used vegetable pulp rather than meat…interesting! Worth a shot! I changed the recipe a little to work without cheese but used the same times and temp :

Carrot Pulp Meat(less) Balls

  • 2 cups carrot pulp (from juicing)
  • 2 eggs
  • 1 tbs onion powder
  • 2 tsp garlic salt
  • 1 tbsp oregano 
  • 1/2 tbsp basil

Mix all ingredients together, make into 2″ balls and place on cookie sheet with parchment paper, bake at 375 degrees for 15 minutes, remove from oven and turn over, bake for another 15 minutes.

I am sure I made them too big…but they smelled great! They could def use a little more seasoning…next time!

I still had a lot of pulp left, so I found another recipe – this time for Juice Pulp Muffins! Again, I needed to modify the recipe for what I have in the kitchen and such :

Carrot Juice Pulp Muffins

  • 3 eggs
  • 1/4 cup honey
  • 1 cup applesauce 
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tbsp cinnamon
  • 2 tsp baking soda
  • 1 tsp salt
  • 4 cups juice pulp

Start with 2 bowls – one small bowl for dry ingredients and a larger bowl for the eggs, honey, and applesauce. Mix the wet ingredients and set aside. Mix up the dry ingredients and then blend into the wet. Once incorporated, add the pulp and any extra mix-ins (i.e. raisins, walnuts, dried fruit, chocolate, etc.). Put mixture in greased cupcake pan (I made parchment paper inserts) and bake at 300 degrees for 15-20 minutes – or until a toothpick comes out clean.

On with the meal prep!

Fresh fruit is ready for the grab-and-go mornings! 


Whoops!! I almost forgot my bananas!! The same lady I got all the vegetables from at the market was selling bags of bananas for $1…so I got like 3 bunches! I could have taken more…but I was already carrying quite a bit and just started my rounds up and down the market! I decided to break them apart and make a batch of Banana Ice Cream – yum!!

Banana Ice Cream

  • frozen bananas
  • vanilla almond milk
  • (optional) mix ins

Cut up and freeze bananas on a cookie sheet. In small batches, blend frozen bananas with almond milk until desired consistency. Add mix ins 🙂 Place in a freezer safe container and place in freezer for 1-2+ hours to set up. Enjoy!!

About this time…I can hear little man talking upstairs. Cooking play time is over…

…for now! 🙂

Little man wanted to watch Toys 3 again…so this buys me just a little more time to cook play! 

I knew I wanted to juice some of the vegetables from today…

Green Juice

  • 1 bunch of kale
  • 1 large cucumber
  • 1 bunch of celery 

I will add a little lemon juice when I decide to drink it… 

Now that I used the carrot pulp, I want to use this green juice pulp too… Off to Pinterest I go! I am going to attempt to make some Juice Pulp Crackers 🙂


Using the basic recipe visual above :

Green Juice Pulp Crackers

  • the pulp from the above recipe (around 3 cups of pulp)
  • 3/4 cup ground flax seed
  • 1 cup sunflower seeds (I have roasted, salted on hand…so probably use less spices due to the salt)
  • 1 cup water

Mix all ingredients in a large bowl. Divide mixture on two parchment lined cookie sheets. Flatten mixture evenly on trays and score the “cracker lines”. Bake sheets at 350 degrees for 30-40 minutes. 

I didn’t score my crackers…so they are not pretty. But one pan I half attempted some lines and they broke apart easily! If I would have just tried a little harder, they would have been “cracker shapes”… 🙂


Once my cracker experiment went in the oven, I started making my cabbage stir fry 🙂

Cabbage Stir Fry

  • 1/2 head cabbage, sliced
  • 2 small bags of frozen green beans from last years harvest
  • 4 large carrots chopped (in my quick chopper)
  • 2 tbsp coconut oil
  • seasoning to taste

Heat large skillet or stock pot with coconut oil. Slice cabbage and add to hot pan. Once cabbage has softened, add green beans, carrots, and spices. Heat until everything is cooked 🙂 

Minus boiled eggs…I am mostly prepped for the coming days!

What?! What do you think you are doing little man?! I knew someone was being a little too quiet… Caught eating all my apple chips 🙂

I settled into watch a little bit of little man’s movie before the hubs came home.

The hubs hasn’t been feeling well and I wasn’t sure what he would be up to for dinner. He decided on Mac and cheese with grapes…simple enough! Pai sure wanted to eat it 🙂

Dinner in bed…whatever. It was only 7pm but it felt like 10pm. Little man was a crazy pants again…and was sent to bed around 8… 

Lazy evening for sure 🙂

Sunday

Well…I am just going to call this a relaxing weekend… 

I have spent every weekend running and running…and running! This weekend is just going to be a lazy weekend 🙂 And somehow, I am okay with that.

Little man and I ate some breakfast, started a movie, played with the blankets, had some juice (sparkling water for little, kombucha for momma).

 

Nothing like a November birthday to bring out the kiddos to play! I’m just glad there was warm coffee 🙂 It really wasn’t bad for the first hour…then it started to get a little chilly…

Little man loves going to the playground…and he had a blast running around with all the kids 🙂

 

Happy Birthday K!!

I was ganged up on by the hubs and little man with those little sticky hands…no fun for me, LOADS of fun for them!

  3. Wow! I’ve been looking for a healthy muffin recipe that actually tastes good and this is it! Bonus that I get to use my leftover carrot juice pulp. I’ve tried so many gluten-free recipes that just don’t taste good or have such a strange texture that they aren’t appetizing, but these aren’t like all the rest!!! Thanks for the awesome recipe!

    1. I really like this recipe and the “Paleo part” of my brain wanted to use my coconut and almond flour… I think I need an extra tablespoon or so of the coconut flour to make them a little less “squishy” in the middle… But these are great!

    Using the pulp of the carrot juice for a meatball recipe is such a great idea!
