vegetable soup + cookies | Meal Prep

Meal/Snack Prep 

Vegetable Soup | vegetables + broth

3 cups carrots, thick rough chop
3 cups celery, think rough chop
3 leeks, thinly chopped
1 large onion, rough chopped
1-2 tbsp EVOO
6 cups water
4 bullion cubes (flavor of choice – I used chicken since that was all I had on hand)
4-5 cloves of garlic, minced
2-3 bay leaves
16 oz green beans (fresh, blanched, frozen)
3 cups corn (fresh, blanched, frozen)

Slice the leeks and onion and put in large pot with EVOO to soften. Cut up remaining vegetables. Put 1/2 the water in the crock pot and the second 1/2 in a sauce pan – bring to boil and add boullion cubes and bay leaves. Add vegetables to crockpot. Pour stock mixture over vegetables. Set crockpot to low for 8-10 hours. Season to taste and enjoy!

Banana Oatmeal Chocolate Chip Cookies | banana + oatmeal + chocolate chips

4 old ripe bananas
2 cups old fashioned oats
4 tbsp mini chocolate chips
2 tbsp chia seeds, soaked in 8 tbsp of water
1 tbsp chia seeds, dry
6-8 tbsp almased

Preheat oven to 350 degrees. Put water and chia in a small bowl and set aside for 5 minutes, stir occasionally. Mash bananas in a large bowl. Add oats until incorporated, then add soaked chia seeds. Mix and then add almased. Once mixed well, add the chocolate chips. Put batter in “piles” on a greased cookie sheet and use fork to spread and flatten the cookies into large rounds. Place in preheated oven for 15-29 minutes or until oats brown. Let cool on baking sheet for 10 minutes before moving to a cooling rack. Makes 12 large cookies.
